Enjoyed your article...I've been wondering if anyone besides me has tried safflower seed sprouts??? It started accidentally, from my bird feeder (and after searching, apparently lots of bird/parrot owners grow these and others for their pricey pets)...anyway, they are delicious in place of lettuce for salads, sandwiches, and even under some chinese food! I've been growing outside in a raised bed garden, snipping off the stringy roots as you suggested, but I'm in the process of trying a windowsill version as well. I find I don't want to be without them, and apparently some little varmint outside feels the same way, so I am re-trying the raised bed outdoors with a screen top. I haven't yet tried sunflower sprouts but I suspect these are similar with good crunch. These are definitely not just for the birds!!!
